Seema's Chia Seed Pudding
Serves 4 people
Ingredients:
- 1 cup vanilla flavoured almond milk (unsweetened)
- 1 cup plain low-fat yogurt
- 4 tbsp pure maple syrup (divided into 2 portions)
- 1 tbsp pure vanilla extract
- Pinch of Kosher salt
- ¼ cup chia seeds
- 1 container of strawberries, 1 container of blueberries-washed thoroughly
- 1/2 cup sliced almonds, roasted
Directions:
- In a bowl, gently whisk almond milk, yogurt, 2 tbsp of maple syrup, vanilla extract and salt. Whisk in the chia seeds and let stand for ½ hour. If chia seeds settle, stir to distribute evenly. Cover and refrigerate overnight.
- The next day, hull and slice the strawberries and stir the remaining 2 tbsp of maple syrup over the strawberries and blueberries. Mix in the toasted almonds.
- Spoon the pudding into nice glasses and top with a generous portion of the berries.
