Seema's Chia Seed Pudding

Serves 4 people

Ingredients:

  1. In a bowl, gently whisk almond milk, yogurt, 2 tbsp of maple syrup, vanilla extract and salt. Whisk in the chia seeds and let stand for ½ hour. If chia seeds settle, stir to distribute evenly. Cover and refrigerate overnight.
  2. The next day, hull and slice the strawberries and stir the remaining 2 tbsp of maple syrup over the strawberries and blueberries. Mix in the toasted almonds.
  3. Spoon the pudding into nice glasses and top with a generous portion of the berries.
